Hyatt is preparing to open the world’s first all-inclusive Park Hyatt in Mexico’s Riviera Maya by the end of 2026, followed by a new hotel in Mexico City’s Polanco district in spring 2027.
The openings will join Park Hyatt Cabo del Sol, which welcomed its first guests in December 2025, giving the brand three properties across Mexico’s Pacific coast, Caribbean shoreline and capital.
The plans form part of a broader expansion across the Americas, including additions to The Unbound Collection by Hyatt and three Grand Hyatt resorts scheduled for the final quarter of 2026.
Park Hyatt Enters the All-Inclusive Market
Park Hyatt Riviera Maya will introduce an all-inclusive format to the brand, with entirely à la carte dining and personalised pre-arrival planning.
The resort will occupy a secluded stretch of Mexico’s Caribbean coast. Hyatt says the experience will emphasise choice and individual service rather than a fixed programme of activities and meals.
In the capital, Park Hyatt Mexico City Polanco is expected to open in spring 2027 with 155 rooms and suites. Located on Campos Elíseos overlooking Chapultepec Park, the hotel will incorporate Mexican art, design and cuisine into its interiors and dining venues.
Both follow Park Hyatt Cabo del Sol, the brand’s first Mexican hotel, which combines contemporary Mexican architecture, oceanfront dining and wellness facilities in Baja California Sur.
Impression Isla Mujeres to Join Unbound Collection
The adults-only, all-inclusive Impression Isla Mujeres will transition into The Unbound Collection by Hyatt on 2 November 2026.
The existing resort will bring suite accommodation and butler service to the collection, which groups hotels with individual identities and distinctive settings.
In Canada, the collection has also added The Clayfield, a wine-country retreat in Niagara-on-the-Lake, Ontario. Its interiors draw on the area’s vineyards and clay-rich soil through earth tones and natural materials.
New Cultural and Culinary Experiences Planned
The Unbound Collection will introduce an experiences programme this year, offering private culinary and wine activities alongside access to local artists, makers and cultural venues.
Participating properties will include The Georgian in Santa Monica, Hotel La Compañía Casco Antiguo in Panama and Impression Isla Mujeres.
Tamara Lohan, Hyatt’s Global Brand Leader for Luxury, said the company’s expansion would focus on hotels with individual character, considered design and personal service.
Alila Mayakoba Adds to the Brand’s Americas Portfolio
Opened in February 2026, Alila Mayakoba extends the brand’s regional presence beyond its three California properties.
The 60-acre Riviera Maya resort has 182 rooms, suites and villas across a landscape of beach, lagoon and jungle. Facilities include six dining venues and Alila Spa, with regional materials, artisan collaborations and local wellness practitioners contributing to the experience.
From 1 October, Alila Mayakoba, Alila Ventana Big Sur, Alila Napa Valley and Alila Marea Beach Resort Encinitas will join Erewhon’s Member Lifestyle Collective.
Three Grand Hyatt Resorts Expected by Year-End
Hyatt also expects to open Grand Hyatt Grand Cayman, Grand Hyatt Cancun and Grand Hyatt Los Cabos in the fourth quarter of 2026.
The Cancún and Los Cabos properties will add all-inclusive stays to Grand Hyatt’s offering in the Americas, extending the group’s resort expansion across Mexico.
