Two of London’s Michelin-starred counter restaurants are joining forces for a special dining collaboration this September, with Pavyllon London welcoming Andy Beynon, chef-owner of East London restaurant BEHIND.
The one-night event will take place on Tuesday, September 22, 2026, as part of Pavyllon London’s Counter Culture series.
Pavyllon London Executive Chef Benjamin Ferra y Castell and Beynon have created four- and six-course menus combining Pavyllon’s modern French gastronomy with BEHIND’s seafood-focused approach.
Both restaurants share a dining concept that places guests close to the kitchen. BEHIND is centered around an intimate 18-seat chef’s counter, while Pavyllon London features a sweeping 30-seat counter surrounding its open kitchen.
The two restaurants also earned Michelin recognition shortly after opening. BEHIND received its Michelin star just 20 days after launch, while Pavyllon London secured its star within six months.
French Gastronomy Meets British Seafood
The evening will begin with a selection of snacks created by both chefs before Beynon presents a series of seafood-focused courses.
The menu includes sea bream with kaffir lime and jalapeño, followed by one of BEHIND’s signature dishes: smoked kipper served with scallops, pike roe and scallop black pudding.
Ferra y Castell will then take over for the main course with poached beef fillet, showcasing the modern French techniques he developed while working alongside acclaimed chef Yannick Alléno.
Dessert will feature dark chocolate namelaka with caramel.
Guests choosing the extended six-course experience will receive two additional dishes. Ferra y Castell will serve orzo pasta with French onion consommé, while Beynon will present a raspberry, herb and ginger pre-dessert.
Chefs Bring Counter Culture to the Dining Room
Guests can choose seats at Pavyllon London’s 30-cover counter, which curves around the restaurant’s open kitchen, or in the main dining room.
Throughout the evening, both chefs will interact with diners and discuss the inspiration and techniques behind their dishes.
The four-course menu, including snacks and petit fours, is priced at £95 per person, while the extended six-course menu costs £120 per person.
