The Clayfield has opened in Niagara-on-the-Lake, bringing a new boutique hotel focused on wine, dining and wellness to the Canadian wine region. Part of The Unbound Collection by Hyatt, the property welcomed its first guests on September 17, 2026, at the start of the autumn harvest season.
The hotel combines architecture inspired by Niagara’s landscape with a restaurant from The Ascari Group, a rooftop patio overlooking the vineyards and a spa offering clay-based and wine-inspired treatments.
A Hotel Rooted in Niagara Wine Country
The Clayfield is a collaboration between two local families: the Feldbergs and the Hawleys. David Feldberg, founder of Stratus Vineyards, envisioned a hotel that would bring together wine, design and hospitality. John Hawley and his family were developing the surrounding neighborhood and its village center, now known as Clayfield Commons.
The two met in 2019 and developed the project around their shared interest in design and the local community.
Montreal-based Sid Lee Architecture designed the hotel, using curved forms that reference the Niagara Escarpment and vertical timber elements that echo vineyard rows. Inside, oak, natural stone and woven textiles sit alongside floor-to-ceiling windows framing views of vineyards and gardens.
Terrain Restaurant and a Vineyard-View Rooftop
Terrain, the hotel’s main restaurant, is operated by The Ascari Group and led by Executive Chef Joel LaBute. Its seasonal menu focuses on regional produce, with a wine list highlighting Niagara wineries and small-lot producers.
The restaurant includes an 80-seat dining room, a 25-seat lobby bar and an intimate Chef’s Table.
The Rooftop at The Clayfield serves cocktails and small plates with vineyard views. Hyatt describes it as Niagara-on-the-Lake’s first rooftop patio.
Clay-Based Spa Treatments and Event Spaces
The hotel’s full-service spa draws on the area’s mineral-rich clay and winemaking traditions, with treatments including clay-based body rituals and vinotherapy.
For meetings, private dinners and celebrations, The Clayfield offers more than 5,400 square feet of flexible event space, including a ballroom with audiovisual facilities.
Exploring Clayfield Commons
The hotel forms part of Clayfield Commons, a neighborhood center where shops, restaurants and services surround a landscaped public green. A seasonal weekly farmers’ market adds to the mix.
Businesses include The Garrison House Restaurant, LoveBee Natural Products, The Organic House Chocolate Co., Bloom & Co., Handmade Presence, Southern + Bel Restaurant and Oliv Tasting Room.
The development is intended to serve residents as well as visitors, bringing local food, retail and creative businesses together in one area.
Reservations Now Open
The Clayfield adds a Niagara-on-the-Lake address to The Unbound Collection by Hyatt, following additions including The Georgian in Santa Monica and Hotel 1000 in Seattle.
Reservations are now available, with opening offers covering stays through April 2027.
